Curry Triangles

After the great successes of our all-vegan Thanksgiving and Christmas Eve Feast of the 7 Fishes we debated what to do for New Year's Eve with Caroline, T, Patrick, and Angela while we played yet another round of the hilarious adult card game "Think You Can Text?". The verdict was unanimous - an all-vegan, all-Asian feast. We spent the better part of December 31 teaming up to make Pot Stickers (bought frozen from Trader Joe's), Scallion Pancakes, Fried Rice, Vegetable Lo Mein, Vegetable Masaman Curry, and Curry Triangles - usually made with a ground beef filling, but with "Beyond Meat" they were beyond delicious. Here's the recipe. Warning...these are best done when you have a team of helpers to wrap them up.

Ingredients

  • 1 lb. ground beef - or "Beyond Meat" for vegetarian
  • 1 cup finely chopped onion
  • 1 TBS finely chopped garlic
  • 1 TBS Curry powder
  • 1 tsp salt
  • 1 TBS sugar
  • 1/4 tsp black pepper
  • 1/8 tsp chili powder (or more to taste)
  • 1 package of egg roll wrappers
  • 1 egg scrambled, or vegan egg replacement like JUST Egg, or just a bowl of water in a pinch (this is for a brush-on wash for "glue")
  • 3 cups of vegetable oil
  • A jar of Chinese "duck" sauce, or plum sauce

Process

  • In a large fry pan or wok, heat 1 TBS vegetable oil over medium high heat until shimmering
  • Add onion and garlic and stir fry until translucent
  • Add meat (or "meat") and stir fry until cooked through and no longer pink
  • Add seasonings and stir fry to mix evenly
  • Set aside in a bowl to cool
  • Begin to heat 3 cups of vegetable oil in a pot, wok, or deep fryer over medium high heat (to 350°)
  • Cut egg roll wrappers into thirds to make strips
  • Place 1/2 TBS of filling at the bottom of a strip and fold over once it in a triangle shape
  • With a pastry brush brush the egg wash all over the remaining part of the strip
  • As you would fold a flag, tightly wrap into a sealed triangle shape
  • Deep fry the triangles until golden brown
  • Set on paper towel to drain excess oil
  • In a small bowl, add a small amount of hot water to the duck sauce to thin it a bit and warm it up
  • Serve triangles with duck sauce
